Joulebody's Watermelon Gazpacho
Makes 4 servings of 2 cups, 84 calories per serving
1 medium, peeled, seeded cucumber (about 1 c. diced)
4 c. watermelon, finely diced
1/2 tsp. cayenne pepper
1/2 c. vegetable broth
3 celery stalks (about 1/2 c. diced)
1/2 small red onion (about 1 c. diced)
1/4 c. finely chopped fresh mint
1/2 wedge lemon juice
2 Tbsp. apple cider vinegar
1/4 tsp. sea salt (Joulebody recommends Celtic brand)
1 handful parsley, chopped
1/2 tsp. olive oil
2 garlic cloves
Mix everything and blend on low speed for three minutes.
