Andrea Lennon of The Good Knife

Find out what this healthy chef is getting at the Greenmarket.

We spotted chef Andrea Lennon of seasonal food caterering company The Good Knife browsing the chamomile at the Union Square Greenmarket. Here's how she's preparing the edible bud:

Flower power. First, remove the buds and very top of the stems, and rinse. "You can use them raw or give a quick sautée with a little olive oil and salt," says Andrea. (Set aside stems for later.)

Better together. "I like to pair chamomile with strawberries," says Andrea. She recommends combining them in a salad with fresh mozzarella.

Tea time. To make a brew, gently bruise unused stems with the back of a knife handle. Add to one to two quarts of water (depending how strong you like it) and simmer for 10-15 minutes. Refrigerate and use the cool tea in Andrea's summer chamomile and strawberry cocktail.
