Baked French Fries

1 large potato
1 Tbsp. olive oil
1 Tbsp. garlic
1 tsp. black pepper
1 Tbsp. oregano
1 tsp. mustard powder
1 tsp. parsley
salt to taste
Heat oven to 425˚F.
Rinse potato. Cut off ends; slice into 1/4" thick fries. Place in medium bowl and add remaining ingredients, tossing until every piece is covered. Spread out onto a baking sheet covered in parchment paper. Bake for 25 minutes, flip, and bake for 10-15 more minutes, until crispy.
